An egg is weighed, then broken onto a flat surface (breakout method), and a micrometer used to determine the height of the thick albumen (egg white) that immediately surrounds the yolk. The height, correlated with the weight, determines the Haugh unit, or HU, rating.

What does the Haugh unit measure?

The Haugh unit, which indicates the relationship of the height of the thick white to the weight of the egg, is the most widely used measure of albumen quality (AMS, 1983, p. 13). Tables for direct determination of Haugh units from height and weight measurements are available (AMS, 1983).

What is yolk height?

Similarly, mean values for albumen height (8.41±0.04 mm), yolk height (18.22±0.03 mm) and yolk width (44.72±0.11 mm) estimated in the experiment are higher than the values from different genetic groups of naked neck chicken, whereas both the strains agree in their mean for albumen width [9].

How do you calculate yolk index?

The yolk index is calculated by dividing the yolk height by the yolk diameter of the egg broken onto a flat surface. It was used as an egg quality indicator in the 1930s.

What equipment or apparatus are used to measure egg weight?

The Egg Analyzer: this instrument determines the weight of eggs, albumen height, Haugh units, yolk colour and USDA grade for routine quality control and regulatory compliance. The Egg Force Reader: this device measures the force required to crush a shell and is a direct measure of marketability, and.

How to Measure Egg Quality

How do you measure egg quality fertility?

In order to assess the overall number of viable eggs, a fertility doctor may take a transvaginal ultrasound. This reveals the amount of follicles in a woman's ovaries. If there are a good number of follicles present, this suggests a healthy ovarian reserve and many viable eggs available.

What is used to measure egg?

The current range comprises:

EggShell Thickness Gauge; this instrument uses ultrasound to measure the thickness of shells for quality control and research applications. Digital Haugh Tester; this instrument measures the height of egg albumen and allows you to manually determine the Haugh unit quickly and accurately.

How do you measure yolk height?

An egg is weighed, then broken onto a flat surface (breakout method), and a micrometer used to determine the height of the thick albumen (egg white) that immediately surrounds the yolk. The height, correlated with the weight, determines the Haugh unit, or HU, rating.

What is the temperature for egg hatching?

Within a range of 35 to 40.5°C (84.5 - 104.9°F) there is the possibility of eggs hatching. The optimum (for hens) is 37.5 °C (99.5°F), above this temperature as well as a reduced hatch there will be an increase in the number of crippled and deformed chicks. Above 40.5 °C (104.9°F) no embryos will survive.

What is the yolk index?

The yolk index, defined as the ratio of yolk height over yolk diameter, provides indication on the freshness of the egg.

How do you test internal egg quality?

Egg quality is a general term which refers to several standards which define both internal and external quality. External quality is focused on shell cleanliness, texture and shape, whereas internal quality refers to egg white (albumen) cleanliness and viscosity, size of the air cell, yolk shape and yolk strength.

What are the egg grades?

• USDA Grade AA – The freshest and highest quality eggs will receive a Grade AA.
• USDA Grade A – Very high quality eggs will receive a Grade A.
• USDA Grade B – Grade B eggs are usually used for breaking stock (liquid eggs) and baking, dependingon the number of defects.

What is the meaning of Haugh?

: a low-lying meadow by the side of a river.

What is the smallest size of egg?

Peewee. Peewee eggs, the smallest weight class, are said to be the rarest size. They're often known as pullet eggs, which means they're laid by very young hens. Peewee eggs weigh in at minimum of 15 ounces per dozen.

What is formed between the shell and albumen?

ALBUMEN CHALAZAE Page 3 AIR CELL The empty space between the white and shell at the large end of the egg. When an egg is first laid, it is warm. As it cools, the contents contract and the inner shell membrane separates from the outer shell membrane to form the air cell.

What happens if eggs don't hatch in 21 days?

Chicks will typically hatch at day 21. If the fertilized eggs were cooled prior to incubation, the process might take a little longer. If you are at day 21 with no hatch, give the eggs a few more days. When the big day comes, let the chick hatch on its own.

Can you turn eggs too much?

Eggs must be turned at least 2-3 times daily during the incubation period. Many experts say if you can turn them 4-5 times a day it is even better. Do not turn eggs during the last three days before hatching. ... Keep the incubator closed during hatching to maintain proper temperature and humidity.

What is the most sensible measure for egg?

The Haugh unit (pronounced: “how”) is a measure of the internal quality of an egg. The test was introduced by Raymond Haugh in 1937 and is considered one of the most significant measures of egg quality next to other measures such as eggshell thickness and eggshell strength.

What are the grade designation of egg in the Philippines?

The modified size classification system prescribed by the Philippine National Standard⁹ was used-Jumbo (>70 g), Extra-large (65-69 g), Large (60-64 g), Medium (55-59 g), Small (45-54 g) and Peewee (<45 g). Eggs were not grouped based on shell color.

What is the other term for egg white?

the white of an egg, especially a hen's egg, used in cooking; albumen.

Why is Spherometer used?

Spherometer. A spherometer is a device used primarily for measuring the curvature of objects such as lenses and curved mirrors.

What does egg quality mean?

Egg quality refers to the state of an egg as genetically normal or abnormal.
